I am sorry to have to vent here, but this is so strange for me. I just had someone standing at my desk whom I normally speak with very openly, and I can't say anything to her. Those of you who know me know that I like to talk. What can I say, I just do. I am afraid to say anything anymore. It is really painful.

So, here are the pics of the dish in progress
These were the ingredients. Leeks, Feta, filo dough, and onion (I think that is actually the plastic wrap but whatever. The of course there were the greens. . . Yes folks that is really two sink fulls of greens. It was crazy. So I put the Greens to boil down, and they turned into this. The it was on to the onions and leeks. I chopped them up. And them sauteed them. First the onions, then I added the leeks. Then I squeezed all of the water out of the greens (after they cooled, and miked the greens, feta, leeks and onion in a bowl. . While all of this has been going on, I have been preparing the filo dough. You have to brush it with olive oil. Since I believe that garlic goes with everything, I added garlic to the filo dough. This was the dish before adding the greens (I ended up switching dishes, no your eyes are not fooling you. Here was the meal all wrapped up before going into the oven Oven Set to 350 and timer set for 35 minutes Out of the oven . Taking the first bite .
Comments on the recipe (what will I do different next time)
1. cook the greens longer. They are a little tough
2. chop up the greens a bit first.
3. Try it with just spinach (that makes it spanakopita I know, but still good)
4. try it with other vegetables (broccoli, carrots, anything really)
5. add some chicken to it.
6. more feta. because who doesn't love feta.
I HIGHLY recommend this dish. It was easy to do. The hardest part was not having a basting brush, and putting too many greens in the pot to boil. That could also be why they didn't cook so well. Oh, and hopefully you have a dad as cool as mine who gets you good knives, but my santuko REALLY came in handy today.

1) What was I doing ten years ago?
Okay so 1998. I was a junior in college. I had just finished up a year at WCSU. I think that would have been the beginning of my summer at the Goodspeed opera house.
This was a fun summer for the most part. THe work was hard, but the parties were fun. And there were a lot of parties. This would be the summer wher eI learned to drink, and therefore began my love of Tequila. Ah Goodspeed summer camp, what fun.
2) What are five (non-work) things on my to-do list for today:
Watch Grey's anatomy
Watch Ugly Betty
Buy Coffee, milk, and the ingredients for the recipe that elynor sent me so that I can use up my turnip greens form my CSA
Water the garden (I have tomatos growing !!!!!!!!!)
exercise for at least 30 minutes.
3) Snacks I enjoy:
Strawberries, pizza, popcorn, chips, pudding, carrots, cucumbers, snickers, cookies, cake, ice cream (a good mix of totally not healthy and healthy, I like moderation)
4) Things I would do if I were a billionaire:
Travel (i'm with you becca)
Open my own Children's theatre company at the Stony Creek Puppet House
Pay off both of my parents houses
Upgrade both of my parents homes so that it is comfortable for guests, small children, and possibly some retrofitting so that they can continue to live their into their later years.
Pay off student loans for myself and my sisters
start college funds for nieces and nephews
Go back to school for . . . . Everything
buy lots of yarn
Start a business for my sister (whatever she wants)
Pay for my sister to get her PhD.
Build my step father a shop that is accessible and easy to work in.
Buy my dream car
help my grandfather prepare to sell his home.
help my grandmother find a perfect assisted living facility OR pay for her to have a private room in the facility she is in.
Never worry about money again.

Yes, there are in fact two of them, and no they are not mine. My sister Rebecca is expecting twins. We are all THRILLED. THey are affectionatly being called. Thing one and Thing two and the Niephews.
In other news I got to be there for lorelai's baptism.
It was a worldwind trip, but so worth it. She was an angel the entire time. Even though Becca will possibly hurt me for posting this, I have to post the socks.
Yup, those a sparkley crosses on that child's feet. . . . . Crazy yes. While visiting home I got to see "the whole gang" for lack of a better term for them. It was great. I higly reccommend Amtrak as a form of inexpensive travel in this crazy world we live in.
Thanks SO much to Lime and Violet I got my first delivery from my CSA yesterday. Strawberries, beets, lettuce, cabbage, red potatoes, onions, and lots of greens. I will have to be an adult and try to eat beets (Elynor you were right they are not turnips). I never liked them as a kid, but I will be a big girl and try them. I have no idea how to cook greens so if anyone knows, please pass it on. It would be most helpful.
Knitting night in Greenvile is going strong. It has become my favorite night of the week. I start my class in "writing a business plan" this week, so that will be fun.
Work, well. . . . . more on that throughout the summer. I love this business that I am in, right now not loving the company I am working for and the choices tha they are making. I am keeping my eyes peeled for something that will make me a bit more happy, maybe a bit more of a paychek or at least some consistancy in hours so that I cna actually work a part time job.
I will also post a recipe today, it is SOOOOOO good.
4 cups rolled oats (not the quick-cooking kind)
2 cups sweetened shredded coconut
2 cups sliced or slivered almonds
3/4 cup canola oil
1/2 cup honey (the better the honey, the better the flavor. it's worth splurging beyond the honey in the bear =)
2 cups small diced dried apricots
1 cup raisins
1 cup dried cherries (I avoid the sour/tart varieties, but that's just my preference)
1 cup dried cranberries
1 cup roasted and unsalted cashews
Preheat the oven to 350.
Toss the oats, coconut, and almonds together in a large bowl. Whisk together the oil and honey in a small bowl. Pour the liquids over the oat mixture and stir with a wooden spoon until all the oats and nuts are coated. Pour onto a 13 by 18 by 1-inch sheet pan (it would be best to use one with slight sides). Bake and stir occasionally with a spatula, until the mixture turns a nice, even, golden brown, about 45 minutes.Remove the granola from the oven and allow to cool, stirring occasionally. Add the fruit and cashews. Store the cooled granola in an airtight container/bag. It'll last at least a month (in theory, we usually go through it in about two weeks =)
